Grilled Salmon with Tomatoes, Spinach and Capers

Salmon offers a variety of health benefits, including protection of your bones. It is also a great source of vitamin D which is needed for calcium absorption. Pair the salmon with calcium-rich vegetables and get a double dose of protection against osteoporosis.

Ingredients:

  • 4 salmon fillets with the skin on (200 g each)
  • 500 g chopped tomatoes
  • 100 g baby spinach chopped
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon capers rinsed and drained
  • 1 medium chopped onion
  • 2 cloves garlic
  • 1 lemon cut into wedges
  • Black ground pepper
  • Salt

Instructions:

  1. Heat oven to grill
  2. Place salmon flesh side up in a baking dish, lightly seasoned with salt and pepper
  3. Grill salmon until it is cooked through, about 8 to 10 minutes
  4. While the salmon is grilling, heat olive oil over medium heat in a large saucepan. Add onion and garlic; cook stirring occasionally until softened (about 7 minutes). Stir in the tomatoes, spinach, capers and cook for 2 minutes longer
  5. Remove salmon from the grill
  6. Serve salmon with tomato mixture and squeeze lemon wedges over the top
